Progress in Application and Synthesis of Sucrose Ester of Fatty Acid 蔗糖酯的合成与应用研究进展
Synthesis methods of sucrose ester of fatty acid are reviewed. Solvent methods ( such as dimethyl formamide, propylene glycol, water, methanol methods) and solvent-free methods ( iuclude biological method) are introduced. 综述了蔗糖酯的合成方法,分别介绍了溶剂法(包括二甲基甲酰胺法、丙二醇法、水溶剂法、甲醇法及相转移催化法)及非溶剂法(包括生物合成法)。
The result show that the combination of 0.12% glycerol monostearate, 0.16% sucrose ester of fatty acid, 0.24% CMC-Na and 0.02% xanthan gum was the best stabilizer for the sesame milk. 结果表明,质量分数为0.12%的分子蒸馏单甘酯和0.16%蔗糖酯S-13与质量分数为0.24%的CMC-Na和0.02%的黄原胶为芝麻奶稳定剂的最佳组合。
